Week of March 8-13
Monday: Morrocan Stew This delicately spiced stew is made with fresh eggplant, tomatoes, chickpeas, sweet potatoes, raisins, and onions. Served over cous cous.
Tuesday: Spaghetti Squash Casserole Indulge yourself in our delicious Low Carb entrée consisting of spaghetti squash, tomatoes, onions, garlic, mozzarella and parmesan cheeses. Spiced just right and baked to perfection.
Wednesday: Bean Burritos Pinto beans with jack cheese and our delicious chile pepper sauce, wrapped in a flour tortilla. Spicy!
Thursday: Meatloaf and Mashed Potatoes A tasty vegetarian meatloaf served with creamy mashed potatoes and mushroom onion gravy. A classic!
Friday: Tofu with Red Curry A taste of Thailand: spicy red curry with tofu, green bell peppers, green beans & fresh basil served over basmati rice.
Saturday: Spaghetti w/ vegetarian meat sauce Spaghetti topped with a vegetarian marinara made with our special meat substitute. Parmesan available upon request - otherwise, Dairy free!
